Apparently, avocado toast has always been a thing. I didn't discover it until Gwyneth wrote about it in her book It's All Good, which, by the way, is one of my favorite cookbooks in in the whole wide world. I use it, mark it up, post-it note it. We have made more recipes in it than I can count.
This avocado toast is just my own creation, made with what I had on hand.
avocado toast + egg
freshly ground pepper
1 slice Ezekiel bread
1 pasture-raised egg
basil infused olive oil
Mash avocado with a spritz of Meyer lemon juice and a pinch of salt and pepper. Toast Ezekiel bread. Top with smashed avocado.
In butter, fry egg over medium heat. Adorn the toast with the egg. Drizzle with basil infused olive oil, sprinkle with salt and pepper and garnish with basil leaves.
